Fast and Easy Veggie Pasta

That's what I call fast food!

This is my 7-step recipe for an easy and delicious Veggie Pasta. (If you are graving meat, please add bacon or chicken stripes with the carrots ;)

I have been craving some good and fast food as I have been running around just on a breakfast bowl of Fruits and Joghurt, so without further ado, here are my 7 Steps or 18 minutes of cooking from opening the pasta package to the first bite of a delightful meal.

Shopping List:

1-2 tomatoes, 1 carrot, 1/2 onion, garlic, parmesan cheese, pasta, (4 cherry tomatoes)

Seasoning:

Salt, Pepper, bay leaf, chili, bouillon powder or cube, basil


Step 1

6 min #barillapasta into a pot.

2 Step

While the Pasta boils - I chop onions, tomatoes, and a carrot

3 Step

The Pasta is al dente, and I save 1/2 a cup of Pasta Water and put the noodles aside for later.

4 Step

The pot is back on the stove with the heat set to medium-high. chuck in the onions, salt, pepper, bay leaf, veggie found powder and let sit for 1 minute

5 Step

Carrote into the pot and let it sit for 1 minute. Tomatoes are put into the pot, stir, and close the lid for 3-5 minutes. I don't worry about a thing and do the dishes in between. Now I open the lid - well, I forgot the garlic and simply cut it into 4 pieces and chuck it in. I wait till the tomatoes, carrots, and onions stick to the bottom of the pot and develop those wonderful roasted aromas.

6 Step

That is when I add about 2/3 of the pasta water from earlier and the rest into the bowl of paste that is set aside - simply to

I pour the other 1/3 of the pasta water over the Spirelli noodles so that they do not stick together. Then I add the Pasta, including the water, to the pot. I stir briefly and then close the lid again.

7 Step

I pluck basil and chop a few cherry tomatoes, which I had left in my fridge - now remove the lid and turn off the heat. Add the basil and cherry tomatoes, drape on plates, sprinkle with some Parmesan cheese and "Bon Appetit"!
